Braised foie gras pate with apple compote and txakoli gelatin
Mediterranean red shrimps

Grilled scallop in shortly smoked, roast pumpkin and fennel

To choose:

Monkfish, roasted in its juice with romescu and garlic sauce
Braised turbot loin with wheat and emulsion of mollusks

Sliced grilled sirloin steak, with cream of Idiazabal cheese
